I was really craving the chicken marsala one day. The creamy sauce over beautifully sauteed mushrooms and artichoke hearts sounded just perfect. So, I wandered in and when I reached the counter, I dithered. My thought process, all shared out loud was something along the lines of “I really want chicken marsala, but I really shouldn’t eat an entire plate full of luscious pasta lest my diet go completely to pot. Maybe I’ll get some shwarma or a chicken pita instead…” And, as I trailed off, the owner leaned over and said two very magical words.
Zucchini noodles.
And so, despite having had many delicious flatbreads, pitas, and other dishes at Couscous, my go-to is now chicken marsala with zucchini noodles. Long, tender strips of healthy zucchini so perfectly mimic the texture of pasta that I hardly notice the difference.
It’s not like I’m gluten free or anything, but if you are, he’s got you covered with other things like quinoa instead of couscous. In the mood for nachos? The corn chip substitute they use which is made of garbanzo beans are fantastic.
Which isn’t to say that the pasta isn’t great. I’ve loved everything I’ve had that lived on Pasta Avenue, with the gnocchi deserving a special shout out.
